Have you ever had one of those packages of peanut butter cheese crackers? I buy them for a quick snack for the King. Well a while back my oldest son Drew comes in telling me about his new culinary cuisine he concocted. He said it was a Peanut Butter Grill Cheese Sandwich. Eweee, Yuck! That doesn't sound good at all! His response was don't knock it till you try it. Okay, I'll give him that! And I really had no intentions of trying it.

Then a while later, William, the other King or Court Jester (aka youngest son), asked me to make one of those sandwiches Drew was talking about. He wanted to try it. So.... I made him one and he loved it!!!

Today there wasn't much to eat or make a sandwich out of so I decided I'd try their concoction. I shorted the original version just a bit. I didn't think I needed 3 slices of bread! Here's my shortened version.

Butter 1 slice of bread

Place buttered side down in a skillet

Add one slice of cheese

Spread peanut butter on top of the slice of cheese

Butter another slice of bread and place if buttered side up on top of the peanut butter

Grill in the skillet until golden brown

Flip over and grill on the other side until golden brown.

And there you have it.  A Peanut Butter Grill Cheese Sammy.  Serve it up and enjoy.

This is how the original version goes if you want to go all out!

3 slices of bread
Peanut butter butter or margarine
2 slices of cheese
Butter 2 slices of bread.
Place one buttered side down in a skillet.
Place 1 slice of cheese on top
Spread peanut butter on both sides of the remaining slice of bread. (This is a bit tricky without making a big mess.)
Place on top of the sliced cheese in the skillet.
Place another slice of chess on top of that
Top with the final buttered slice of bread, placing it buttered side up.
Grill in the skillet until golden brown, flip over and grill the second side until golden brown. Yummm! Yummmmm!

It will never make the cover of Fine Cooking or Cooking With Paula Dean but it will fill your hunger void.
