Some of you have asked for it, so here it is.  The Sugar Cookie Recipe:

3/4 c. margarine, melted
1 c. sugar
1 tsp. vanilla
2 eggs
3 c. all purpose flour
1 tsp. baking powder
1/2 tsp. salt.

Combine margarine and sugar together in large bowl.  Add vanilla and eggs.  Mix well with a hand mixer.  Add dry ingredients (flour, baking powder, salt).  Mix by hand.  (you will not be able to use a mixer at this point.  The dough will be too thick).  Store in refrigerator at least 1 hour (I usually store overnight.  Any longer and my family will eat the cookie dough raw and there won't be any left to bake!)  Roll out to desired thickness (some people like them thin and crispy, some like them thick and soft).  Sprinkle with sugar if desired (large granular works best).  Bake in 350 degree oven for 10-12 minutes on a baking sheet.  Makes about 3-4 doz. cookies.

A couple of other notes for success:

1.  Use cheap, store brand margarine.  I don't know why but it seems to work better and dough will be less "sticky" than if you use a name brand margarine.
2.  I usually double or triple this recipe. 
3.  Unless you like really hard,crispy cookies, do not bake them until they turn brown.  They won't!  If they turn light golden brown, they're burnt!  They should be about the same color when you take them out of the oven as they are when you put them in.  I usually bake mine about 9-10 minutes.  My hubby likes them really soft!
4.  If you are going to decorate them with a butter creme icing, don't sprinkle them with sugar.  The icing will go on easier and they will be plenty sweet with the icing on them.

  1. You are right ......double to triple the recipe ...make some coloured icing and let the kids ho! They love to create their own designs ! These cookies are soooo good ! Thanks for posting the recipe again, my great nephews love to come and bake up a storm!
